Antioxidants exist  in number of substances  and foods and intend to protect us from a natural  but destructive phenomenon: oxidation. What are Antioxidants? in which foods are they? 

what is  oxidation?
Oxidation is a chemical reaction: the combination of oxygen in the air with another element. When it takes place, an atom or ion loses one or more electrons are released. But as an electron does not supported  alone, it will take place elsewhere, at a place that is not its. Then electron damaged or destroyed  elements that squattered . This oxidation phenomenon  takes place everywhere where there is oxygen. It causes rust metals that are not stainless, oxidation phenomenon seen on vegetables and fruit, rancid fats, it changes the taste and color of food. That is why we add to neutralize the protein, antioxidants in many products of agribusiness.

  oxidation in the body:

Oxygen is involved in all chemical reactions in your body that produce heat and lénergie. All the cells of your body affected by the phenomenon of oxidation. The result: a waste called “free radicals” that destroy your cells. They attack the nucleic acids of your chromosomes (where lies the DNA), proteins your cells, polyunsaturated fatty acids your cell membranes, your enzymes. You are equipped to fight against this oxydtion because you have a huge defence system which operates at all times. However when it is overwhelmed by multiple attacks such as cigarette smoke, pollution, sun, sweat, etc… damage occurs then. Oxidation is involved in aging and is by external events such as wrinkles, skin detoriation, dull complexion. The internal consequences are identical but not visible, and can sometimes cause serious diseases.
 
 antioxidants:
A number of substances come to your aid when your first line of defense is natural overwhelmed. These are the carotenes, polyphenols, flavonoids, vitamins C and E, selenium and zinc. They act in synergy, for example:
– Carotenes + polyphenols enhance the activity of vitamin C.
But it is far, yet, everything on this very complex phenomenon that has been called “oxidative stress” on the action of antioxidants that are known and all those that have been identified but which one remains unclear how they operate, or what.
 are antioxidants found which foods?
– Carotenes: in fruits and colored vegetables.
– Flavonoids and polyphenols: in fruits, vegetables, tea, wine and chocolate.
– Vitamin C in fruits and vegetables, citrus fruits are the richest.
– Vitamin E: primarily in vegetable oils
– Selenium: in fish, meat, eggs and cheese.
– Zinc: in products of animal origin, especially in seafood and shellfish.

Note: When a diet in which fats, oils, therefore, are limited, a supplement of vitamin E can not hurt, quite the contrary!
